Way to keep bread soft longer (without adding chemicals)

Seeing as how I allow myself Thanksgiving as a carb cheat day, I wanted to make extra good rolls. I usually just settle for Pillsbury crescent rolls, but I planned a bit better this year so I wanted to develop better skills and do it homemade. Which required research if I was going to make better rolls than I have made in the past.
What I found was a Japanese technique called tangzhong. I'm pretty sure that most real bakers have known about it for years, as the Japanese have used it in their milk bread for centuries, but it's new to me so I'm excited to try it.
The basics are this:
1. if the ratio of liquid to flour is less than 75%, you'll need to add more liquid, and
2. you then cook a portion of your liquid and flour in a saucepan, like a roux, until it thickens. Put it in your mixing bowl and, once it cools enough, mix with the rest of the dough and prepare as normal.

The trick is that it BINDS that cooked flour and liquid together, so the overall dough holds onto the moisture better. you wouldn't want to use it on breads you want to have a firmer texture or crisper crust, but for the soft, squishy Parker House rolls I'm making for Thanksgiving, it should be just about perfect.

When did you say we should show up?  Is 2 good?
What-about-ism is pointless. I like to think most people's responses to such arguments would be, "Yup. That person, who happened to wear the same political jersey I do/did, was totally wrong on that, too."

I am constantly impressed by people who are patient enough to cook food from scratch. 

I wield a mean microwave, and occasionally a mean debit card at Wendy's.
